Recipe – Sticky Misiluki Pudding with Siamu Popo

 

The final episode of series one from Real Pasifik sees Robert travel back across the Pacific and revisit some of his treasured haunts.

Viewers will be treated to seeing Dora Rossi from Paddles Restaurant in Apia, Samoa whip up a dessert which is sure to become a firm favourite should you choose to make it yourself – here’s Dora’s recipe for those who can’t resist.  Take it from us – it’s YUM!

Sticky Misiluki Pudding with Siamu Popo

Sticky Misiluki Pudding

INGREDIENTS – Serves 4

400g dried Misiluki Bananas*
2 ½ cups hot water
2 Tbs baking soda
120 g cubed soft butter
1 ½ cups white sugar
4 eggs
2 cups self raising flour

METHOD

Soak dried bananas in hot water with the baking soda for 5 minutes.
Add cubed butter + sugar and blitz until smooth.
Add one egg at a time, incorporating well.
Add flour and whisk until just combined.
Bake @ 180C for 45 to 50 minutes or until just set.

Siamu Popo


INGREDIENTS

3 cups brown sugar
2 cups fresh coconut cream
4/5 lime leavesMETHOD
In a saucepan on medium heat, caramelize the brown sugar, add the fresh coconut cream and lime leaves and mix with a whisk until smooth.

Strain through a sieve discarding lime leaves and lumpy bits.
Serve your Sticky Misiluki Banana Pudding and ‘Siamu Popo’ at room temperature or warm.

 *We used the Women in Business Development WIBDI Dried Bananas. You can dried bananas in bulk food bins in many supermarkets or health food shops. They are completely organic and absolutely delicious.
