Real Pasifik Secondary Schools Recipe 2013 Competition Winner!

As we still continue to celebrate our first series of Real Pasifik, more excitement has been added to the platter through the Real Pasifik Secondary Schools Recipe Competition. Through the competition, we gave students the chance to showcase their culinary culture and skills. Students had the option to make a South Pacific Island dish focusing on using a traditional recipe and ingredients or developing a new twist on a traditional dish. We developed this competition with the hopes of inspiring communities to create and experiment with traditional Pacific cuisine while aiming to use local ingredients. We chose to run this competition with secondary schools as we recognise the potential and power of our young people.

The competition officially closed at the end of the last month and what a competition it has been. We would like to extend a huge thank you to all who put forward entries. While the entries were excellent, the best entry that presented a great fusion of cultural influence and modern cuisine was that by Libby Harrison. We congratulate Libby, a Year 10 student from Epsom Girls Grammar School, who put forward her recipe for a Coconut Loaf with Pineapple glaze. Libby also provided us with a great personal glimpse into her background to the dish:


“This dish has a Samoan influence. Although I may not look like it I am part Samoan. My dad is half which makes me a quarter. This recipe was passed down to me from my great aunt who shares the love of baking with me. I have slightly changed the recipe and added a pineapple glaze to make it taste better and give the dish a more gourmet look. The flavours from this dish remind me of my trips to Samoa, the delicious coconut buns and the juicy fresh fruit, which we ate while looking at the beautiful beach every morning for breakfast. This dish is a family favourite because it is so easy to make with only a few ingredients while being full of flavour and delicious.”


The winning entry by Libby Harrison, a Year 10 from Epsom Girls Grammar. Stay tuned for next week when the recipe will be posted.


The entry was simple and sophisticated. As a prize, Libby’s school (Epsom Girls Grammar School) will be receiving a school visit from international chef and Real Pasifik host Robert Oliver. A signed copy of Robert Oliver’s award winning ‘Me’a Kai- the food and flavours of the South Pacific’ book will also be provided to the school. Great job Libby! We hope you and your school enjoy the prizes!
